Fish soup

Here’s a simple and flavorful Fish Soup Recipe:

Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 red bell pepper, diced
  • 2 medium potatoes, peeled and diced
  • 1 can (400g) diced tomatoes
  • 1 liter fish or vegetable broth
  • 500g white fish fillets (like cod, haddock, or tilapia), cut into bite-sized pieces
  • 1 bay leaf
  • 1 teaspoon dried thyme or oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (optional, for serving)

Instructions:

  1. Sauté the vegetables: Heat the olive oil in a large pot over medium heat. Add the chopped onion, garlic, carrots, celery, and red bell pepper. Cook for 5-7 minutes, stirring occasionally, until the vegetables start to soften.

  2. Add the potatoes and broth: Add the diced potatoes, canned tomatoes (with juice), fish or vegetable broth, bay leaf, thyme, and paprika. Stir everything well, then bring the soup to a boil.

  3. Simmer: Reduce the heat to low and let the soup simmer for about 20 minutes, or until the potatoes are tender.

  4. Add the fish: Gently stir in the fish pieces. Let the soup simmer for another 5-7 minutes, or until the fish is cooked through and flakes easily.

  5. Season: Remove the bay leaf and season the soup with salt and pepper to taste.

  6. Garnish and serve: Serve the soup hot, garnished with fresh parsley and a squeeze of lemon juice if desired.
